Nothing says summer quite like fresh-picked blueberries! Whether you picked your own or picked up a basket from our farm, this is one of our family’s favorite ways to enjoy them. Sweet, juicy blueberries topped with a buttery oat crumble. It’s simple to make and even better served warm with a scoop of vanilla ice cream.
Ultimate Blueberry Crumble
Prep Time: 15 minutes
Bake Time: 40–45 minutes
Serves: 8
Ingredients
Blueberry Filling
6 cups fresh blueberries
â…“ cup granulated sugar
2 tablespoons brown sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
½ teaspoon cinnamon
Pinch of salt
Crumble Topping
1 cup old-fashioned oats
1 cup all-purpose flour
¾ cup brown sugar
½ teaspoon cinnamon
¼ teaspoon salt
½ cup (1 stick) cold butter, cubed
Directions
Preheat your oven to 375°F.
In a large bowl, gently mix the blueberries with the sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
Pour the blueberry mixture into a greased 9-inch baking dish.
In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter until the mixture becomes crumbly.
Sprinkle the topping evenly over the blueberries.
Bake for 40–45 minutes, until the filling is bubbling and the topping is golden brown.
Let cool for about 10 minutes before serving.
Serving Ideas
Top with vanilla ice cream.
Add a dollop of fresh whipped cream.
Enjoy with your morning coffee for breakfast (we won’t tell!).
Blueberry Tip
Fresh blueberries are naturally packed with antioxidants, vitamin C, and fiber. They freeze beautifully too! Simply spread washed berries on a baking sheet to freeze individually before transferring them to a freezer bag, so you can enjoy the taste of summer all year long.
Happy baking and thank you for supporting local agriculture! We hope this recipe brings a little extra sweetness to your table this summer.
